1/2 Day Nature-based Pre-K
Caribbean cuisine has been affected by geography, history, and culture. Prepare a vegetarian meal featuring virgin piña colada, gallo pinto (rice and beans), tostones (fried plantain chips), sautéed vegetables, and flan for dessert. Learn a bit of Spanish along the way!
After earning a master's degree in Hispanics Linguistics at the University of Minnesota, Betty Lotterman worked as a high school Spanish teacher for 30 years. She has received many awards for her professional expertise in how to teach languages effectively. She also organized and chaperoned a summer immersion program in Mexico for Mounds View Public Schools. She has traveled widely throughout the Spanish-speaking world and is familiar with the varieties of cultures found there. Now that she is retired she enjoys spending time with her grandson, teaching English classes to recent immigrants, gardening, and cooking.
