Prepare and enjoy a vegetarian Mexican dinner including Mexican rice, refried beans, sopes, salsa verde, and pico de gallo. Explore Mexican indigenous food and how it has changed since the arrival of the Europeans. Learn Spanish terms for foods and cooking processes while cooking together.


All Community Education participants are required to follow SPPS COVID guidelines (https://www.spps.org/safelearningplan), and all other communicated health and safety expectations. Failure to do so could result in removal from the class/program.

Betty Anne Lotterman

After earning a master's degree in Hispanics Linguistics at the University of Minnesota, Betty Lotterman worked as a high school Spanish teacher for 30 years. She has received many awards for her professional expertise in how to teach languages effectively. She also organized and chaperoned a summer immersion program in Mexico for Mounds View Public Schools. She has traveled widely throughout the Spanish-speaking world and is familiar with the varieties of cultures found there. Now that she is retired she enjoys spending time with her grandson, teaching English classes to recent immigrants, gardening, and cooking.
